My enthusiasm for cooking didn’t sprout until I was in my mid-twenties despite helping my mother in the kitchen since I was kid. I always got stuck with doing all the crappy jobs like washing the vegetables or peeling the prawns. I also come from a family of 6 stubborn daughters. Family meal times were always a brewing teapot of turmoil. Cooking had always presented itself as a nuisance much like cleaning the dishes. It wasn’t until a chance 3 month backpacking trip through South East Asia that ignited a passion about food. It was mostly the street cart vendors that caught my attention. I loved watching them prepare my order. Throwing together a rainbow of ingredients and smashing them up or searing them in a flaming wok. It was very theatrical and dramatic and it all seemed easy. I found my inner foodie during this trip and it seemed only natural that I became curious about the ingredients and the magic that could be created when it all came together at the right temperature. Bo Bia is a lesser know variant of the famous Goi Cuon (Vietnamese Summer Roll). It is a similar concept but with different filling. I had never heard of this roll until I mistakenly bought some while I was backpacking through Saigon (Ho Chi Minh City, Vietnam). I thought I was ordering Goi Cuon from the street vendor but luckily got a bag of this. In my severely broken Vietnamese I asked the vendor for the ingredients. However, there was one ingredient that I did not understand. It wasn’t until my arrival home and some rifling through cookbooks that I realised it was jicama (yam bean). This peculiar vegetable is best described as a cross between apple, radish and water chestnut. It can be eaten raw and is prized for its crisp, clean taste. It also remains crisp if cooked. Jicama can be used in spring rolls and salads and frequently appears in vegetarian meals. Carrying on from my previous post, my fascination with homemade bread continues. I am currently in my second week of of nurturing a sourdough starter and it is bubbling away beautifully. I am too impatient to wait to the third week to make bread again so I pulled out this recipe from Richard Bertinet’s book, Dough. This is a fabulous book for novice bread makers like myself. The book concentrates on technique and timing. There are some great informative step-by-step pictures and includes an in-depth 30 minute DVD. The book uses fresh yeast, I was unlucky on my last visit to the local deli, they had run out of fresh yeast and were not getting a delivery until the following week. With some advice from a friend on twitter I substituted it with instant dried yeast. The result was glorious. This gorgeous bread was made with only 4 ingredients. It created a wonderfully chewy, soft, light as air crumb and the crust is thin and delicate, reminiscent of ciabatta. The whole process didn’t take more than 2 hours. Bo Bia is a lesser know variant of the famous Goi Cuon (Vietnamese Summer Roll). It is a similar concept but with different filling. I had never heard of this roll until I mistakenly bought some while I was backpacking through Saigon (Ho Chi Minh City, Vietnam). I thought I was ordering Goi Cuon from the street vendor but luckily got a bag of this. In my severely broken Vietnamese I asked the vendor for the ingredients. However, there was one ingredient that I did not understand. It wasn’t until my arrival home and some rifling through cookbooks that I realised it was jicama (yam bean). This peculiar vegetable is best described as a cross between apple, radish and water chestnut. It can be eaten raw and is prized for its crisp, clean taste. It also remains crisp if cooked. Jicama can be used in spring rolls and salads and frequently appears in vegetarian meals. I always put making bread from scratch into the too hard basket. The thought of standing there and kneading dough for 30 minutes really put me off, not to mention the long rising times and the age old dispute about sourdough vs fresh yeast vs dry yeast. It was just easier to go to my local artisan bakery and buy a loaf for a few dollars. It only takes about 30 minutes to walk there and back. That all changed a few months ago when I discovered CityHippyFarmGirl. She made gorgeous luscious loaves and it inspired me to begin my own sourdough starter. I did some research and settled on a recipe from one of my favourite food writers. I purchased organic rye flour and organic bread flour and followed the recipe as closely as possible. It failed on the fifth day. It stopped bubbling and emitted a vomit-like odour. I threw the entire thing in the bin and decided that I don’t eat bread often enough to justify maintaining a starter. I get so excited when I come across a recipe that works very well. It’s almost kiddy like. Similar to when a child gets hold of a new toy and spends days walking around with it like it’s a security blanket. This recipe for a sticky date loaf worked perfectly for me. I want to scream it from the rooftops or print it on a flyer and drop it into people’s mailbox. I’ve tried several sticky date pudding recipes before and they have been delicious, but there is something special about this one. It is an easy recipe that can be mixed in one pot. It is soft, moist and isn’t overly sweet. The gorgeous flavour of the dates really shines through. I am an absolute lover of butterscotch syrup on sticky date pudding, it makes it all the more luscious. However this golden syrup butter really compliments the sticky date loaf and lightens it up too. The idea of whipping and cooking egg whites used to make me want to lie down in a dark room. They always seemed far too difficult and after a horrific attempt many years ago, my desire to ever work with them were wrapped up, boxed and placed on the never-again shelf. By chance, I stumbled upon a recipe for Swiss Meringue Buttercream by Whisk Kid and her step-by-step instructions were clear, precise and best of all, helpful. I successfully baked a Rainbow Cake using her famous recipe and I haven’t looked back. Making these super delicious meringue nests were easy, far easier than baking a cake, with significantly fewer ingredients and labour. If you have a stand mixer you could almost make this recipe and paint your nails simultaneously. Tropical Meringue Nests with Mango and Coconut Makes approx 10 4 egg whites, at room temperature 1 cup (220g) caster sugar 1 tablespoon desiccated coconut 2 teaspoons cornflour ½ teaspoon white vinegar 1 cup thickened cream 1 tablespoon coconut milk powder 1 mango Meringue Nests Preheat the oven to 100°C. It is very rare that I breakaway from my beloved cookbooks and try out a recipe on my own. I am a semi-confident cook but I am not so sure about my abilities in recipe developing. If you followed my last two postsyou’ll know that I am trying to be more fearless in the kitchen. I am attempting recipes that challenge me, in this case, I put a bet on myself that I could make a dumpling recipe that could become a weeknight staple. My first attempt was meagre and needed some fine tuning. My second attempt was more acceptable. We had some friends coming over for dinner and I used the third attempt with some further tweeking to make these delicious and easy dumplings. They were perfect. My friends and I felt like we were eating like kings and queens. I have since fried them like a gyoza and wrapped them into wonton dumplings. I’ve dipped them into soy sauce and smothered them in my Homemade XO Sauce. Whichever way that I have served it I have been very happy with it. If you ever try out these dumplings please let me know how you go. Easy Homemade Dumplings

Herbs are a tricky ingredient. They can make or break a dish. Too little and the dish is bland and boring. Too much and it’s like your eating the entire contents of your granny’s medicine cabinet. It is with this reason that I absolutely refuse to buy my herbs from supermarkets. They are more than likely incubated in hothouses and can be fed with a host of unsavoury pesticides. They are often bland and twice the size that they should be. I want my herbs to be burgeoning in the full blaze of the sun and their roots soaked with rainwater.
