Six reasons why summer (kinda) rhymes with sugar in Vietnam
by Thuc Nguyen @ Paloma Motorbike Tours
Thu Jul 13 01:26:23 PDT 2017
There are millions of ways to enjoy the cool, sweet taste of summer in Vietnam, so here are some of our favorites. Che The sweet, slippery soup is one of the most iconic Vietnamese desserts. There are dozens of versions, ranging from a simple glass of just lotus seeds to a rainbow of beans, roots, cassava and jelly cubes. Crowded che stands can be found in most big markets across the country, including Nam Dong in Hanoi and Ben Thanh in Ho Chi Minh City. For something different, tourists can try the one served at the Cambodian market in the southern city. The shop is owned by a Vietnamese man who grew up in Cambodia but returned in the 1970s, serving the best of both Cambodian and Vietamese desserts. A serving usually costs $1 or less. Ice-cream in a coconut shell One scoop of ice-cream for the summer, or two? Well, it might be easier if you just have it all in a coconut. Kem dua is a special Vietnamese version of ice-cream served in a coconut shell topped with coconut strips, peanuts and chocolate sauce. The best way to eat it is to dig the spoon deep and take a full bite...

Fancy one of the world’s greatest food experiences? Try Hanoi
by Thuc Nguyen @ Paloma Motorbike Tours
Wed May 10 01:51:18 PDT 2017
Tourists eat out late at night in Hanoi. Photo by VnExpress/Giang Huy The Telegraph gets its teeth into Hanoi cuisine, and it’s not the famous ‘pho’ or Obama’s ‘bun cha’ Many people are drawn to a destination just because of how well it triggers their appetite, and for that reason, Hanoi is one of the world’s greatest cities to visit, The Telegraph recommends. The U.K. newspaper published a list of “the world’s 17 greatest cities for food” on Sunday and the Vietnamese capital grabbed second spot, after Tokyo. “Hanoi’s compact old center is arguably the better place to sample the balance of salt, sweet, sour and spice in Vietnamese cuisine,” it said, comparing the city with the popular southern metropolis of Ho Chi Minh City, which is “more international”. Hanoi is where one can take to the streets and eat like a local, it said. The city offers some of the most popular Vietnamese dishes such as “banh mi”, a baguette usually filled with grilled pork, meatballs or cold cuts, cucumber, cilantro, pickled carrots, liver pâté and a swipe of mayonnaise, or “com...

Green lotus tea

Mon Jun 26 21:18:09 PDT 2017
Green lotus tea has other names: trà sen, chè sen or chè ướp sen (in Vietnamese) Vietnamese lotus tea is a type of green tea that already absorbed the scent of lotus. Lotus is a type of flower that grows in a lake, and it symbolizes beauty, purity, and good fortune in Vietnam. Traditionally, workers will row out to the lake in the middle of the night when nectar of the lotus is at its fullest. Then, they will carefully open up all petals of the flower, fill it with green tea leaves (without making it wet), tie the petals together tightly with string, and let tea sits and absorbs the scents overnight. To collect the tea, workers have to row out to the lake again in the morning, open up the flower petals, and harvest the natural lotus scented green tea. Due to the natural process of making lotus tea, it is considered an art in Vietnam. HISTORY Lotus tea was originally created for King Tu Duc during the 19th century Nguyen Dynasty, but the people also love the art of making tea and it became a custom for them to take their boats out onto the ponds and...

Hanoi’s lantern festival

Tue Oct 03 19:28:25 PDT 2017
An exhibition has revived the old spirit as Vietnam counts down to the full moon on Wednesday night. Lanterns for sale on Hang Gai Street during the Mid-Autumn Festival in 1926. The festival peaks on the full moon of the eighth lunar month, which falls on Wednesday this week. Children are drawn to a fish lantern outside a shop on Hang Gai in the Old Quarter. Star-shaped lanterns, the most popular toy during the festival, are made on the sidewalk. A wooden fighting roosters toy in a photo captured in 1937. Animals made from rice flour were popular in Hanoi nearly a century ago. These toys are still on sale in Vietnamese cities, but they now appeal more to nostalgic adults. A lion dance troupe prepares for their performance on Hang Thiec Street. Women make mooncakes on Hang Duong Street, known as the city’s sweets street, in a photo in 1928. Hanoi’s notorious black market, where anything goes
by Thuc Nguyen @ Paloma Motorbike Tours
Fri Aug 04 02:15:19 PDT 2017
Don’t expect a receipt if you’re looking to buy anything from this market. Most Hanoians would be flummoxed if you asked them where Hoa Binh Market is, but if you asked them about Chợ Giời, it would be a different story. The name Chợ Giời tells a story itself as its earliest vendors used to gather in an open-air spot to sell pretty much everything they owned, hence the name “Giời”, meaning sky, God and outdoors in Vietnamese. The market is believed to have opened in 1955 on the corner of two streets, but since then it has expanded to more than four streets and two big alleys along the busy thoroughfares of Hue and Hang Bai. In Chợ Giời, vendors sell everything from car parts and metal springs to TV remotes. Some old, some new, some possibly stolen. The majority of the goods are mechanical items, and here you can find the tiniest screwdrivers to rare 1980’s amplifiers all under the same roof. Following the war and the subsidy period, Chợ Giời was split down into different departments. Yen Bai 2 Street was known for its CDs and DVDs — before the Internet and Youtube changed all that. Nguyen Cong Tru Street draws vendors selling...

Gastronomic gastropods- Vietnamese loves snails !
by Thuc Nguyen @ Paloma Motorbike Tours
Tue May 30 21:41:04 PDT 2017
From Michelin-starred fine dining, to chili-laden, beer-swilling, street-food staple, the humble snail takes many forms. Oysters, lobsters, sushi and snails; all now “posh” and expensive elements of global food culture. They were, however, once all considered to be the food of the lower-classes. In fact, oysters were so plentiful during the European colonization of the Americas that their crushed shells were a common component in brick making. Likewise, the practice of wrapping raw fish (and other meats) in rice was, many centuries ago, a common way for Japanese farmers and fishermen to preserve food for several months at a time. And then there’s lobster, that ubiquitous element of modern fine dining. According to a report on the creature’s recent popularity by the U.K.’s Telegraphnewspaper, the clawed crustacean was “once not deemed worthy for anything other than the ‘lowest of the low.’” It’s funny how things change. Add a bit of gold leaf, a smear of pureed veg, a froth of salty foam, and a jacked-up price tag, and suddenly the cuisine of the working classes jumps a few steps up the social ladder. As with bread, beef, carrots and coffee, it would be easy to assume that the practice of...

Wed Nov 29 01:08:25 PST 2017
Follow the locals to nameless roadside eateries as the cold snap bites in Vietnam’s capital. Snails Unlike the spicy snails that are carefully fried or grilled in Saigon, the snails served on cold days in Hanoi are simply boiled. Feel the steam from the snails served with ginger sauce and lemongrass. Snails tend to appear in the rivers around Hanoi between autumn and winter. Try the tasty treats in small restaurants at 5 Tong Duy Tan, 1 Dinh Liet, 34A Tran Phu and 88 Cua Bac. Sweet dumplings These dumplings are made from sticky rice stuffed with mung beans or black sesame. The rice balls are then soaked in ginger syrup and served hot. Head to Hang Dieu, Quan Thanh or Tay Ho far a sample of these sweet balls from either age-old eateries or street vendors. Rib porridge Hanoi people love rib porridge and it’s needless to say why this hot congee with quay(fried dough) is a perfect choice for a cold day. There’s a nameless roadside stall at 2A Ly Quoc Su Street that man locals say serves the best rib porridge in Hanoi. You can also find this hot treat in Dong Xuan Market. Saigon to Hanoi by Motorbike: 5 Suggested Routes
by Thuc Nguyen @ Paloma Motorbike Tours
Wed Jun 14 00:24:14 PDT 2017
Riding from Saigon to Hanoi by motorbike is probably the most popular road trip in Vietnam, and it’s unquestionably one of the best ways to experience the country. For years, travellers simply took the most obvious route: Highway 1. Today, however, thanks to ambitious road building programs, there are far more scenic, pleasant and less trodden ways to ride between the country’s two main cities. Having ridden south to north on numerous occasions (the first time, predictably, on Highway 1), I’ve put together the following 5 suggested motorbike routes from Saigon to Hanoi, so that travellers who are planning this road trip have more of an idea of the kind of options available to them. 1. THE CLASSIC: Total Distance: 2,770km Average Duration: 2-4 weeks Road Conditions: paved rural & coastal back-roads, new & old highways Navigation: mostly simple, some tricky bits in central areas Scenery: coast, highlands, mountains, limestone, cities, villages, cultural sites DESCRIPTION: Weaving a course between coast and highlands, The Classic route is equal parts beach and mountain. Quiet, stunning coastal roads in the south and central provinces yield to a mighty landscape of limestone karsts on the Ho Chi Minh Road in the north-central region. Popular towns and sights, such as Mui...

Autumn spirit served up in the form of rice flakes by Hanoi village
by Thuc Nguyen @ Paloma Motorbike Tours
Fri Oct 27 21:53:05 PDT 2017
Like pumpkins and candy at Halloween, rice flakes are a must during the fall in the capital. It is an unwritten rule that when you talk about autumn in Hanoi, you have to mention rice flakes. No one knows when the flat sticky rice first became an autumn delicacy in the capital, but the art of making the tasty snack has been well-preserved for more than a century in Me Tri Village. More than 50 households in this village have their fires burning for rice flakes twice a year, depending on the harvest season. Experience shows that rice picked during fall makes the best rice flakes because it is sweeter and more aromatic. The sticky rice used for rice flakes should come from young plants. Me Tri Village in Nam Tu Liem District and Vong Village in Cau Giay District are the most famous places in the north for this treat. These women are removing the grains from paddy flowers. The grains are soaked in water. The tailings, which float to the surface, are removed. The grains are roasted for two hours. Then they are ground under a wooden pestle, and the ground grains are screened again to remove all the husks. The final product is wrapped in lotus leaves, and these green-yellow...
