Feel the steam from the snails served with ginger sauce and lemongrass. Snails tend to appear in the rivers around Hanoi between autumn and winter. Try the tasty treats in small restaurants at 5 Tong Duy Tan, 1 Dinh Liet, 34A Tran Phu and 88 Cua Bac. Sweet dumplings These dumplings are made from sticky rice stuffed with mung beans or black sesame. The rice balls are then soaked in ginger syrup and served hot. Green lotus tea has other names: trà sen, chè sen or chè ướp sen (in Vietnamese) Vietnamese lotus tea is a type of green tea that already absorbed the scent of lotus. Lotus is a type of flower that grows in a lake, and it symbolizes beauty, purity, and good fortune in Vietnam. Traditionally, workers will row out to the lake in the middle of the night when nectar of the lotus is at its fullest. Then, they will carefully open up all petals of the flower, fill it with green tea leaves (without making it wet), tie the petals together tightly with string, and let tea sits and absorbs the scents overnight. To collect the tea, workers have to row out to the lake again in the morning, open up the flower petals, and harvest the natural lotus scented green tea. Due to the natural process of making lotus tea, it is considered an art in Vietnam. From Michelin-starred fine dining, to chili-laden, beer-swilling, street-food staple, the humble snail takes many forms. Oysters, lobsters, sushi and snails; all now “posh” and expensive elements of global food culture. They were, however, once all considered to be the food of the lower-classes. In fact, oysters were so plentiful during the European colonization of the Americas that their crushed shells were a common component in brick making. Likewise, the practice of wrapping raw fish (and other meats) in rice was, many centuries ago, a common way for Japanese farmers and fishermen to preserve food for several months at a time. And then there’s lobster, that ubiquitous element of modern fine dining. According to a report on the creature’s recent popularity by the U.K.’s Telegraphnewspaper, the clawed crustacean was “once not deemed worthy for anything other than the ‘lowest of the low.’” It’s funny how things change. Don’t expect a receipt if you’re looking to buy anything from this market. Most Hanoians would be flummoxed if you asked them where Hoa Binh Market is, but if you asked them about Chợ Giời, it would be a different story. The name Chợ Giời tells a story itself as its earliest vendors used to gather in an open-air spot to sell pretty much everything they owned, hence the name “Giời”, meaning sky, God and outdoors in Vietnamese. The market is believed to have opened in 1955 on the corner of two streets, but since then it has expanded to more than four streets and two big alleys along the busy thoroughfares of Hue and Hang Bai. In Chợ Giời, vendors sell everything from car parts and metal springs to TV remotes. Some old, some new, some possibly stolen. The majority of the goods are mechanical items, and here you can find the tiniest screwdrivers to rare 1980’s amplifiers all under the same roof. Following the war and the subsidy period, Chợ Giời was split down into different departments. Yen Bai 2 Street was known for its CDs and DVDs — before the Internet and Youtube changed all that. Nhat Tan Bridge Nhat Tan Bridge, also known as the Vietnam – Japan Friendship Bridge, was inaugurated in January 2015. It is the first cable-stayed bridge in Hanoi with a total length of 8.9km (5.5 miles) with five spans, representing the capital city’s five ancient gates, crossing the Red River. The project had total investment of VND13,600 billion ($598 million), split between the Japan International Cooperation Agency (JICA) and the Vietnamese government. The bridge was opened for public together with Nhat Tan – Noi Bai Highway which helps shorten travel time between Noi Bai International Airport and Hanoi’s center. Dong Tru Bridge Dong Tru Bridge opened to traffic in October 2014. The 1.1km bridge crossing the Duong River in Long Bien District cost VND882 billion and has eight lanes. It is 55m wide and has two 80m side-spans and a 120m central span. The bridge was built using concrete-filled steel arches, the first time this technology had been used in Southeast Asia. It is also the widest bridge in Vietnam. Thang Long Bridge Thang Long Bridge was built from 1974 to 1985. The 3,250-meter long bridge connects the city with Noi Bai Airport and was considered a symbol of Vietnam-Soviet relations....

An exhibition has revived the old spirit as Vietnam counts down to the full moon on Wednesday night. Lanterns for sale on Hang Gai Street during the Mid-Autumn Festival in 1926. The festival peaks on the full moon of the eighth lunar month, which falls on Wednesday this week. Children are drawn to a fish lantern outside a shop on Hang Gai in the Old Quarter. Star-shaped lanterns, the most popular toy during the festival, are made on the sidewalk. A wooden fighting roosters toy in a photo captured in 1937. Animals made from rice flour were popular in Hanoi nearly a century ago. These toys are still on sale in Vietnamese cities, but they now appeal more to nostalgic adults. A lion dance troupe prepares for their performance on Hang Thiec Street. Women make mooncakes on Hang Duong Street, known as the city’s sweets street, in a photo in 1928. A family offers a festival feast on their altar. A crab lantern. The Vietnam Academy of Social Sciences is displaying the photos at the Hanoi Ancient House, 87 Ma May, Hoan Kiem District. For years, travellers simply took the most obvious route: Highway 1. Today, however, thanks to ambitious road building programs, there are far more scenic, pleasant and less trodden ways to ride between the country’s two main cities. Like pumpkins and candy at Halloween, rice flakes are a must during the fall in the capital. It is an unwritten rule that when you talk about autumn in Hanoi, you have to mention rice flakes. No one knows when the flat sticky rice first became an autumn delicacy in the capital, but the art of making the tasty snack has been well-preserved for more than a century in Me Tri Village. More than 50 households in this village have their fires burning for rice flakes twice a year, depending on the harvest season. Experience shows that rice picked during fall makes the best rice flakes because it is sweeter and more aromatic. The sticky rice used for rice flakes should come from young plants. Me Tri Village in Nam Tu Liem District and Vong Village in Cau Giay District are the most famous places in the north for this treat. These women are removing the grains from paddy flowers. The grains are soaked in water. The tailings, which float to the surface, are removed. The grains are roasted for two hours. Then they are ground under a wooden pestle, and the ground grains are screened again to remove all the husks. The final product is wrapped in lotus leaves, and these green-yellow...
