I just came back from a long weekend of Chinese New Year celebrations in Boston, where I basically gorged on good seafood the whole time.  It's the double threat of being in a New England city known for its abundance of seafood, and being in the midst of the New Year celebrations where lobster, steamed fish, seafood nests, and shrimp and scallop stir-fries are de rigueur. So naturally, when I came back to New York earlier this week, I was still on a seafood high. And wanted to continue cooking it both for weekday meals and for sharing with you all on this here blog. Fermented black beans, if you're not already familiar with them through dishes like mapo tofu or black bean chicken, are very potent and tasty, but definitely not the most attractive ingredient in the world. They come prepackaged in either a plastic bag or a plastic or glass jar. The best way to describe the smell right out of the package is "super funky barnyard". That said, when cooked, they add a wonderful earthiness to Chinese dishes, so that's why we use 'em. However, if you do buy them in plastic, it's best to transfer them to a glass container with a tight lid, to store in the back of the fridge. That way, their lovely funky aroma won't bother anyone and they'll keep for a really long time.

Vietnamese steak salad served on a bed of greens and tomatoes, topped with pickled onions and a lime dipping sauce. This widely popular Asian dish combines many taste sensations and creates a harmony of flavors with every bite. The "shaking" in the name refers to the tossing of the beef back and forth in the wok after it's quickly seared. You can serve this as a salad for a low carb meal or make some rice on the side. This is traditionally served over a bed of watercress which I couldn't find, so I used an arugula blend instead. Thick soy sauce is traditionally used here, but you can use low sodium soy sauce instead if this is not available to you. This was a recent recipe which I wanted to make as authentic as possible and upon doing some research came I came across and this recipe from Ravenous Couple who was guest posting on Rasa Malaysia. Shopping for Chinese Ingredients

Recently I estimated that over the past 8 years, I've taught close somewhere between 400 to 500 cooking classes. (And I don't even want to think about how many dumplings we've made in all those classes!) And whenever I teach, the most common questions I get from students are about where to buy ingredients around the city and the best brands to get. Navigating those grocery store aisles for unfamiliar ingredients, sometimes with dozens of varieties for something like rice vinegar, can be a very daunting task. So in the past few years I've begun emailing students a resource list with good stores for Chinese ingredients (with links to addresses), some of my preferred brands for the ingredients, and recommended Chinese restaurants around New York.  While most of the list is New York-specific, I hope that those of you who live outside the city can make use of the recommended brands section to find these ingredients closer to where you live.  I will be continually updating this, but feel free to make suggestions for your own favorites!  Stores: * Manhattan - Hong Kong Supermarket (one stop shopping, big supermarket, big produce section) * Manhattan - New Kam Man (also a big store, basement full of Chinese cooking equipment and serving dishes) * Brooklyn - New York Mart * Brooklyn - Fei Long Supermarket * Queens - Jmart inside the New World Mall (this place is enormous, probably the best selection in the city) * Queens - Hong Kong Supermarket of Flushing

Summer nights are not meant for spending hours in the kitchen. My apartment is blessed with huge southwest facing windows, which let in tons of natural light in the winter, but come summertime that means the entire place is a furnace for most of the day. Turning on the AC before sundown does nothing. So naturally, if I make dinner before sunset, I need to be prepared to sweat a little. This all means that I need main dishes that take as little time as possible. Like this sweet chili shrimp dish. Whenever friends and acquaintances tell me they've tried my cookbook, about half the time they also tell me that this is the first recipe they try from it. Which surprised me...I would have thought something more of a restaurant staple like kung pao chicken, General Tso's, or lo mein, but I guess it was just the simplicity of the ingredients that lured them in. The tangy, sweet, and spicy sauce with an edge of garlic may seem complex, but actually requires few ingredients and less than 5 minutes of cooking time. I like eating it most with rice, but the sauce is also sublime poured over al dente noodles. And for all your lucky folks with outdoor space and grills, I'd also recommend marinating the shrimp in both the marinade and sauce, then grilling them instead. Hi again! I know, I know. It's been a while since a posted a new recipe. Between running Plate & Pencil, teaching, and putting on Tangra Spring, I've been a little short on time, to put it mildly. Sadly, things like creating new recipes can sometimes go on the back burner. Also, this winter sure was long wasn't it? I think the lack of sunshine, the frigid April that felt like March, and rainy May that felt like April made most of us feel a little less inspired in the kitchen. Sometimes all I wanted was soup, spaghetti, pizza,  soup, spaghetti, pizza, rinse, repeat. Anything that could be made or purchased in 10 minutes or less. (Okay, there were also many days of making dumplings en mass, to store up for the week ahead.)  Luckily, creating new recipes for Tangra Spring, the Indian-Chinese vegetarian dinner series I co-chef with Chitra from ABCD's of Cooking, brought the fun back into cooking again. We had yet another great night cooking for our guests, aided by some fantastic local produce from Good Eggs, like radishes, ramps, and bok choy microgreens.  And these sweet potatoes.

Pho Bo Editor's note: The recipe and introductory text below are excerpted from Mai Pham's book Pleasures of the Vietnamese Table. This beloved noodle soup is a complete meal in itself and is best served for breakfast or lunch on a weekend. Because the simmering takes at least two hours, I like to prepare the broth a day ahead of time and keep it in the refrigerator, where it will last for three days. Many cookbooks call for it to be made with oxtail bones, but I prefer marrow bones and beef chuck, which is what pho cooks in Vietnam use. A good pho broth needs to be clear, not muddy and dark, certainly fragrant of beef, anise and ginger. You can serve this soup with several toppings, but the easiest ones to prepare at home are cooked and raw beef. To use broth that has been made in advance, bring it to a boil, then add fresh ginger to refresh it. Come serving time, get friends or family to help cook the noodles and assemble the bowls. Make sure that the broth is boiling hot and the bowls preheated. Allow about 1 part noodles to 3 parts broth for each bowl.

I had been meaning to update this recipe for a while. Whenever I teach Intro to Sichuan cooking classes, we focus on simple and easy-to-love stir-fry dishes such as Kung Pao Chicken, Mapo Tofu, and Dan Dan Noodles. But anyone who has spent enough time in good Sichuan restaurants is bound to eventually try a dish listed as Chongqing chicken, Sichuan chicken with chilis, wok-fried chicken, or a number of similar names. (Lazi jiding is the name in Mandarin.) And inevitably in every class, when I go around the room during the intro ice-breaker and have students list their favorite Sichuan dish of all time, at least one or two will mention this dish. When a student in a private class I recently taught requested we work on this dish, it reminded me of how long it has been since I made it at home. And so I decided to update this, making it extra crunchy with the method I developed for dishes like General Tso's Chicken and Chinese Lemon Chicken  in my cookbook. Lazi jiding (辣子鸡丁) is like a more sophisticated version of kung pao chicken . It's smokier, spicier (a lot spicier if you chop up the chilis), and only a bit more complex in its preparation. (The way I make it is more like shallow-frying. I use about 3 cups of oil, and dredge the chicken in a cornstarch-salt-pepper mixture beforehand.) Few fried chicken entrees are enveloped by such a succulent tongue-tingling sauce.

Stir-Fried Beef with Black Pepper + Anolon/Cookbook Giveaway!

How did the summer fly by so quickly? It seemed like only yesterday that I was looking forward to Memorial Day picnics and plugging free summer movies and concerts into my Google Calendar. Where did the time go? What happened to my summer reading? Why have I not taken more beach trips? How have I not once used my ice cream maker that's taking up precious cabinet space, for the 4th year in a row?   You can see how fall would inspire an existential crisis. Harrumph. Onward and upward, I guess. A few weeks ago, Kian Lam Kho from Red Cook asked me to take part in his Mid-Autumn Festival Blog Feast to celebrate his cookbook Phoenix Claws and Jade Trees. This gorgeously photographed book is a comprehensive tome on Chinese cooking techniques (think the Chinese version of Mastering the Art of French Cooking.) I was more than happy to oblige, fantasizing about the amazing red cooked pork from his book that I was going braise on the stove while sipping apple cider, as the crisp fall air—scented with pumpkin spice or something—circulates around my apartment. Well, I was wrong. Just cuz Labor Day came and went does not mean the weather catches up. In terms of weather, we're still in the midst of summer in NY, and my AC is as wonky as ever. Braising will have to wait for another day.  Luckily, there was this stir-fried beef with black pepper recipe. It was fast, hearty, and made ample use of oyster sauce for an abundance of earthiness. The recipe also called for a generous amount of coarsely ground black pepper, which is used as a spice rather than a seasoning in Chinese cooking.  I made a few minor tweaks to the recipe, such as using hangar steak instead of beef tenderloin that it called for because my local butcher had it today and the marbling looked too good to pass up. Flank steak is another good option.
